Ingredients

  • 1 tbsp vegetable or olive oil
  • 14 oz Italian sausages, casings removed
  • 1 tbsp chili powder
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 lb long ciabatta bread, halved lengthwise
  • 1/3 cup tomato paste
  • 1 cup grated Cheddar cheese
  • 1/3 cup sour cream
  • 1/2 cup chunky salsa
  • 1 None green onion, thinly sliced
  • None None Mixed salad, to serve

Directions

    Preheat the oven to 450°F. Heat the oil in a large skillet on medium-high heat. Cook the sausage meat, stirring to break up any lumps, for 5 mins or until browned. Add the chili powder and beans and cook, stirring until heated through.

    Place the bread halves, cut-side up, on a large baking pan. Spread the tomato paste evenly over the bread. Top with the sausage mixture, then the cheese.

    Bake for 15 mins or until golden. Top the bread with sour cream, salsa and onion. Serve with salad.
