Tex-Mex Corn Dip

  • 1 Tablespoon Butter
  • 2 cups Corn Kernels
  • 1/2 cups Mayonnaise
  • 1/4 cups Sour Cream
  • 1 Tablespoon Lemon Juice
  • 2 Tablespoons Chopped Cilantro
  • 2 Tablespoons Grated Cotija Cheese
  • 1 whole Tomato, Diced
  • 1/2 teaspoons Cumin
  • 1/4 teaspoons Chili Powder, Or To Taste
  • Salt And Pepper, to taste

Directions

    Add the butter to a pan over medium heat.

    Once melted add the corn and saute until very lightly browned.

    Remove from the heat and allow to cool slightly while you make the dressing.

    Combine the mayonnaise, sour cream, lemon juice, cilantro, grated cheese, tomato, cumin and chili powder in a large bowl.

    Stir in the corn and season with salt and pepper.
