- 6 hard-cooked eggs
- 1 Tbsp. finely chopped green onions
- 1 Tbsp. chopped, fresh cilantro or parsley
- 1 small jalapeno pepper, seeded and chopped
- 1/4 c. mayonnaise
- 1 tsp. prepared mustard
- 1 oz. (1/4 c.) shredded Cheddar cheese
- chili powder
Directions

1Slice each egg in half crosswise.

2Remove yolks.

3Place in small bowl and mash.

4Add green onions, cilantro, jalapeno pepper, mayonnaise and mustard; blend well.

5Spoon about 1 tablespoon of yolk mixture in each egg half.

6Top each with cheese; sprinkle with chili powder.
