Tex-Mex Deviled Eggs

  • 6 hard-cooked eggs
  • 1 Tbsp. finely chopped green onions
  • 1 Tbsp. chopped, fresh cilantro or parsley
  • 1 small jalapeno pepper, seeded and chopped
  • 1/4 c. mayonnaise
  • 1 tsp. prepared mustard
  • 1 oz. (1/4 c.) shredded Cheddar cheese
  • chili powder

    Slice each egg in half crosswise.

    Remove yolks.

    Place in small bowl and mash.

    Add green onions, cilantro, jalapeno pepper, mayonnaise and mustard; blend well.

    Spoon about 1 tablespoon of yolk mixture in each egg half.

    Top each with cheese; sprinkle with chili powder.
