  • 1 lb ground beef
  • 1 tablespoon vegetable oil
  • 1 (24 ounce) packagefrozen potatoes o'brien with onions and bell peppers
  • 1 cup thick & chunky salsa
  • 2 teaspoons chili powder
  • 8 ounces shredded colby-monterey jack cheese, shredded

    In Large skillet, brown beef.

    Drain.

    Remove meat fro skillet and keep covered set aside.

    In same skillet heat oil over medium heat until hot.

    add potatoes, cook and stir 8 -10 minutes or until browned.

    Stir in salsa, chili powder and ground beef.

    Cook 5-8 minutes or until heated through.Sprinkle with cheese.

    Cover and cook 4 minutes over low heat or until cheese has melted.
