Tex-Mex Salad

Ingredients

  • 14 ounces ground beef
  • 1 slice bread crumbled
  • 1 egg
  • 1 pinch paprika
  • 1 pinch chili powder
  • 1 1/2 tablespoons canola oil
  • 2 tablespoons orange marmalade
  • 3 tablespoons ketchup
  • 4 tomatoes deseeded and diced
  • 2/3 cup white wine vinegar
  • 3 drops hot sauce
  • 1 head romaine lettuce torn into bite-sizes
  • 4 onion peeled and sliced
  • 15 ounces sweet corn drained
  • 15 ounces red kidney beans cans, drained and rinsed
  • 2 1/2 ounces tortilla chips to serve

Directions

    Mix ground beef, bread and egg. Add paprika and chili powder and season to taste. Form into meatballs. Heat oil in a frying pan and saute meatballs for about 3-4 mins until browned. Set aside to cool slightly.

    Heat marmalade in a saucepan then add ketchup and diced tomato. Add vinegar and hot sauce and season to taste. Toss with lettuce, onions, corn, beans and meatballs then distribute between serving plates. Serve garnished with tortilla chips.
