  • 3 qt. or 12 c. diced tomatoes
  • 3 medium bell peppers
  • 6 Jalapeno peppers cut up
  • 3 medium onions diced
  • 5 garlic cloves cut up
  • 1 1/2 c. vinegar
  • 5 tsp. salt
  • 3 tsp. sugar
  • 1/4 tsp. cayenne
  • 1/4 tsp. oregano
  • 1/4 tsp. cumin

    Cook first 5 ingredients until coarse. (15 minutes)

    Add vinegar, salt, and sugar.

    Simmer for 30 minutes.

    Add remaining ingredients.

    Cook for 15-20 minutes longer.

    Pour into jars and seal.
