  • 1 each: onion and green pepper, cut in strips
  • 1/2 lb. sliced mushrooms
  • 1 cup salsa
  • 2 cups Cracker Barrel Shredded Tex Mex Cheese, divided
  • 4 large flour tortillas, warmed
  • shredded lettuce and tomato wedges

Directions

    COOK and stir onions, peppers and mushrooms in a large greased frypan for 2 to 3 min.

    Stir in salsa and 1-1/2 cups cheese, until melted.

    SPOON onto centre of each tortilla; top with lettuce and tomato.

    FOLD up bottom and overlap the sides; sprinkle with remaining cheese.
