Ingredients

  • 4 to 5 lb. chuck roast or bottom round
  • 3 Tbsp. drippings
  • 2 onions, chopped
  • 1/2 c. catsup
  • 1/2 c. water
  • 1/4 c. vinegar
  • 1 Tbsp. Worcestershire sauce
  • 2 Tbsp. brown sugar
  • 1 tsp. each: dry mustard, salt and pepper
  • 2 Tbsp. chili powder
  • 2 cloves garlic, minced

Directions

    Brown meat well in drippings.

    Then add onions and sauce. Simmer slowly most of the day, 5 to 6 hours, until very tender. Remove any bones.

    Slice meat and return to sauce.
