Ingredients

  • 1 1/4 lb. dried pinto beans
  • 7 c. water
  • 1 small ham hock
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 1/2 tsp. salt
  • 1 (1 lb.) ring smoked beef and pork sausage, thickly sliced
  • 1 (10 oz.) can tomatoes with green chilies (undrained)
  • 1/2 c. uncooked regular rice

Directions

    Wash and sort beans.

    Combine beans, water, ham hock, onion, garlic and salt in large Dutch oven.

    Bring to boil.

    Cover, reduce heat to medium and cook 45 minutes.

    Add remaining ingredients.

    Cover, reduce heat and simmer 1 hour, stirring occasionally.

    Remove meat from ham hocks and return meat to beans.
