- 1 1/4 lb. dried pinto beans
- 7 c. water
- 1 small ham hock
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 1/2 tsp. salt
- 1 (1 lb.) ring smoked beef and pork sausage, thickly sliced
- 1 (10 oz.) can tomatoes with green chilies (undrained)
- 1/2 c. uncooked regular rice
Directions

1Wash and sort beans.

2Combine beans, water, ham hock, onion, garlic and salt in large Dutch oven.

3Bring to boil.

4Cover, reduce heat to medium and cook 45 minutes.

5Add remaining ingredients.

6Cover, reduce heat and simmer 1 hour, stirring occasionally.

7Remove meat from ham hocks and return meat to beans.
