  • 12 lb lean ground beef
  • 12 cup onion, chopped
  • 1 (8 ounce) package reduced-fat cream cheese
  • 12 cup water
  • 1 (4 ounce) can green chilies, chopped
  • 12 teaspoon salt
  • 1 teaspoon chili powder
  • 12 teaspoon dried oregano leaves
  • 14 teaspoon ground cumin
  • 2 eggs, beaten
  • 34 cup unbleached all-purpose flour
  • 12 teaspoon salt
  • 34 cup reduced-fat milk
  • 1 tablespoon yellow cornmeal
  • 12 cup cheddar cheese, shredded
  • 12 cup fresh tomato, diced

Directions

    Brown meat; add onion cook until tender, about 5 minutes.

    Add cream cheese and water; stir over low heat until cream cheese is melted.

    Stir in peppers, salt, chili powder, oregano and cumin.

    In a medium-sized bowl, combine eggs, flour, salt and milk; beat until smooth.

    Pour mixture into prepared pan.

    Sprinkle with cornmeal; spoon meat mixture evenly over top.

    Bake at 400 for 35 minutes.
