- 4 medium potatoes, peeled and sliced
- 1/2 lb. sausage
- green peppers, chopped (to taste)
- 4 eggs, beaten
- 4 slices cheese
Directions

1Fry potatoes until tender.

2Fry sausage while potatoes are cooking.

3After potatoes and sausage are cooked, layer sausage over potatoes.

4Pour beaten eggs over sausage and potato layer.

5Cover and let cook.

6When eggs are cooked, add green peppers on top of eggs.

7Put cheese slices on top of green peppers.

8Cover and let cheese melt.

9Recipe can be doubled.
