- 175 g butter, softened
- 150 g caster sugar
- 1 tsp vanilla essence
- 4 medium eggs
- 150 g dark chocolate, melted
- 250 g plain flour
- 2 tsp baking powder
- 200 g cream cheese
- 1 tbsp double cream
- 150 g nougat
- 24 small sugar eyes
Directions

1Preheat oven to 350°F. Line a 12-cup muffin pan with paper liners. Cream butter, sugar, vanilla extract and a pinch of salt. Add eggs, 1 at a time, then fold in chocolate. Sift in flour and baking powder then fold in. Distribute between paper liners and bake for about 25 mins. Remove and let cool on a wire rack.

2Meanwhile, mix cream cheese, cream and nougat then transfer to a piping bag. Remove cupcakes from liners, cut in 1/2 horizontally, fill with cream cheese frosting then sandwich back together. Decorate with sugar eyes and serve.
