  • 1 can pinto beans with jalapeno
  • 1 1/2 lb. ground chuck
  • 1 chopped onion
  • 2 cloves garlic, chopped
  • 1 can cream of chicken soup
  • 1 can mild enchilada sauce
  • 1/2 tsp. hot sauce
  • 18 corn tortillas, torn in small pieces
  • 2 c. Cheddar cheese

Directions

    Saute meat, onion and garlic.

    Stir in remaining ingredients, except cheese and tortillas.

    Layer, beginning with meat.

    Bake in 9 x 13-inch pan at 350° for 35 minutes.
