  • 2 cans Trappeys Black-Eyed Peas
  • 1 can Petite Diced Tomatoes, Drained
  • 2 whole Diced Jalapeno Peppers
  • 1 whole Small Onions, Diced
  • 1/2 whole Yellow Bell Pepper, Diced
  • 1/2 whole Red Bell Pepper, Diced
  • 3 Tablespoons Cilantro, Chopped
  • 6 Tablespoons Red Wine Vinegar
  • 6 Tablespoons Olive Oil
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Black Pepper
  • 1 Tablespoon Garlic, Minced
  • 1 teaspoon Dried Oregano
  • 1- 1/2 teaspoon Ground Cumin

Directions

    Mix everything together and refrigerate at least 2 hours.

    You can leave it in the fridge for a couple of days and it will be fine.

    The red wine vinegar, salt and pepper can be adjusted to taste.
