- 2 cans Trappeys Black-Eyed Peas
- 1 can Petite Diced Tomatoes, Drained
- 2 whole Diced Jalapeno Peppers
- 1 whole Small Onions, Diced
- 1/2 whole Yellow Bell Pepper, Diced
- 1/2 whole Red Bell Pepper, Diced
- 3 Tablespoons Cilantro, Chopped
- 6 Tablespoons Red Wine Vinegar
- 6 Tablespoons Olive Oil
- 1/2 teaspoons Salt
- 1/2 teaspoons Black Pepper
- 1 Tablespoon Garlic, Minced
- 1 teaspoon Dried Oregano
- 1- 1/2 teaspoon Ground Cumin
Directions

1Mix everything together and refrigerate at least 2 hours.

2You can leave it in the fridge for a couple of days and it will be fine.

3The red wine vinegar, salt and pepper can be adjusted to taste.
