Ingredients
- 1 large piece of suet or 1/2 c. shortening
- 5 lb. beef chuck, cut into 1 1/2-inch cubes
- 1/2 c. chili powder
- 2 tsp. cumin seed
- 1 tsp. oregano
- salt and pepper to taste
- 1/2 c. flour
- 4 c. beef broth
Directions

1Heat suet in large saucepan until 1/2 cup fat is rendered.

2Add meat cubes and cook stirring until meat loses its red color. Sprinkle with garlic and chili powder and flour, stirring.

3Crush cumin and oregano and add to meat.

4Add beef broth.

5Bring to a boil.

6Cover and simmer at least 4 hours.

7The meat should be fork-tender when done.

8Great served over brown rice.
