  • 3 pounds chili-ground beef
  • 3 large onions, chopped
  • 1/2 cup all-purpose flour
  • 1 (10 1/2-ounce) can beef consomme, undiluted
  • 1/4 cup plus 2 tablespoons chili powder
  • 1 tablespoon salt
  • 1 tablespoon ground cumin
  • 1 1/2 teaspoons ground oregano
  • Shredded Cheddar cheese

    Combine ground beef and onion in a large Dutch oven; cook until meat is browned, stirring to crumble meat. Drain off pan drippings. Stir in flour; cook 2 minutes, stirring constantly. Gradually add consomme, stirring constantly. Stir in chili powder, salt, cumin, and oregano. Simmer, uncovered, 30 minutes or until thickened, stirring occasionally.
