- 1 c. yellow corn meal
- 1/2 tsp. salt
- 2 tsp. baking powder
- 2 eggs, beaten
- 1 (8 1/2 oz.) can cream-style corn
- 3/4 c. buttermilk
- 1/4 c. bacon drippings
- 1 1/2 c. shredded Cheddar cheese
- 1/4 c. finely chopped, seeded jalapeno peppers
Directions

1Preheat oven to 375°.

2Grease 9 x 9-inch baking pan.

3In large bowl, combine corn meal, salt and baking powder.

4In medium bowl, with a fork, beat together two eggs, corn, buttermilk and bacon drippings.

5Pour all ingredients together and stir until moistened.

6Pour 1/2 of the batter into prepared pan.

7Sprinkle with cheese and peppers; top with remaining batter.

8Bake 35 to 40 minutes, until golden.

9Serve warm.
