- 1 lb. Monterey Jack cheese, grated
- 1 lb. sharp Cheddar cheese, grated
- 6 eggs, lightly beaten
- 1 (5 oz.) can evaporated milk
- 3 (4 oz.) cans chopped chilies, drained
- cayenne pepper to taste
Directions

1Preheat oven to 350°.

2In large bowl, combine cheeses with eggs and evaporated milk.

3Line 9 x 13-inch pan with chilies and cover with cheese mixture.

4Bake for 40 minutes.

5Cool slightly and cut into bite size squares.
