Ingredients

  • 13 oz. jar pickled jalapeno peppers
  • 1 lb. Cheddar or Monterey Jack cheese, shredded
  • 6 eggs, well beaten

Directions

    Drain jalapenos, seed, stem and chop well.

    Combine with cheese.

    Sprinkle mixture in bottom of 13 x 9-inch pan.

    Pour beaten eggs over the cheese and pepper mixture and bake 25 minutes in preheated 350° oven.

    Cool slightly and cut into squares to serve.
