- 13 oz. jar pickled jalapeno peppers
- 1 lb. Cheddar or Monterey Jack cheese, shredded
- 6 eggs, well beaten
Directions

1Drain jalapenos, seed, stem and chop well.

2Combine with cheese.

3Sprinkle mixture in bottom of 13 x 9-inch pan.

4Pour beaten eggs over the cheese and pepper mixture and bake 25 minutes in preheated 350° oven.

5Cool slightly and cut into squares to serve.
