Texas Grits Casserole

  • 1/2 c. uncooked grits
  • 2 c. water
  • 1/2 tsp. salt (optional)
  • 1/2 c. butter
  • 1/2 c. chopped green peppers
  • 1/2 c. chopped onions
  • 1 c. shredded sharp Cheddar cheese
  • 1 tsp. chili powder
  • 2 eggs, beaten
  • 1 c. milk

Directions

    Bring the water to a boil and add grits and the salt.

    Let simmer for 6 minutes.

    Saute the green peppers and onions in the butter.
  4. 4
    Add to the cooked grits, the onion-pepper-butter mixture, cheese, chili powder, eggs and milk.

    Pour into a 1 quart casserole dish.

    Bake at 350° for 45 minutes or until center is firm. Sprinkle with cheese at the last 5 minutes of baking time.
