Ingredients
- 1 chopped onion
- 4 stalks celery, chopped
- 1 small green pepper, chopped
- 2 Tbsp. vegetable oil
- 1 1/2 lb. ground beef
- 1 tsp. chili powder
- 16 oz. can tomatoes
- 1 1/2 c. cooked rice
- 3/4 c. Cheddar cheese
- salt to taste
Directions

1Saute onion, celery and pepper in oil until tender.

2Add meat and cook.

3Drain.

4Add chili powder and tomatoes.

5Cook 10 minutes.

6Stir in rice and salt. Turn into a shallow baking dish, sprinkle cheese over top and put under broiler for a few minutes until hot throughout.

7Serves 6.
