- 1 lb. hamburger
- 1 green pepper, chopped
- 1 onion, chopped
- 1 c. instant rice
- 1 can Ro-Tel tomatoes
- 1 1/2 tsp. salt
- 1 tsp. chili powder
- dash of pepper
- Velveeta cheese
Directions

1Brown hamburger in skillet and add onion and green pepper. Cook until tender.

2Add tomatoes and seasonings, bring to a boil. Stir in rice, cover and simmer for 5 minutes.

3Turn heat off.

4Top with slices of Velveeta cheese and cover until melted.
