Texas Lemon Pecan Cake

- 2 1/2 c. sugar
- 1 lb. butter or margarine (do not use whipped margarine)
- 6 whole eggs
- 2 Tbsp. pure lemon extract
- 4 c. flour, sifted
- 2 tsp. baking powder
- 4 c. chopped pecans
Directions

1Preheat oven to 350°.

2Place pan of water on lower rack to keep cake from drying out.

3Cream together sugar and butter.

4Add eggs and mix well.

5Add flour, baking powder and lemon extract. Mix well; add pecans.

6Pour into well-greased and floured pans. (Divide batter into 2 Bundt pans.)

7Cake usually has a crack on top.

8After about 30 minutes, place a brown paper (cut from paper bag) over the cake.

9Bake about 1 hour at 350°.

10Time may vary with each stove.

11Let cool for a few minutes before removing from pans.
