- 1 1/2 lb. pork tenderloin
- 1 large onion, chopped
- 2 cans chicken broth
- 2 cans Ro-Tel tomatoes with chilies
- 1 can whole kernel corn
- 1 can black beans, drained and rinsed
- 1 tsp. chili powder
- 1/4 tsp. dried oregano leaves
Directions

1Trim pork of all fat.

2Place in a large saucepan with onion and chicken broth.

3Bring to a boil; reduce heat and simmer for 2 to 2 1/2 hours or until meat is tender.

4Refrigerate and skim off any congealed fat.

5Add remaining ingredients.

6Bring to a boil over medium heat. Simmer 15 to 20 minutes. Serve with jalapeno cornbread wedges.
