- 2 c. pinto beans
- 1/4 lb. salt pork, diced
- 1 c. chopped onion
- 1 clove garlic, minced
- 2 tsp. salt
- dash of pepper
- 2 (16 oz. each) cans tomatoes
- 1 Tbsp. sugar
- 6 drops bottled hot pepper sauce
Directions

1Wash beans before soaking.

2In 2-quart pot or casserole, cover beans with water; soak overnight.

3Do not drain.

4Add salt pork, onion, garlic, salt and pepper to beans.

5Simmer, covered, for 2 hours.

6Add tomatoes, green pepper, sugar and hot pepper sauce. Cover and simmer 3 hours more.

7Makes 8 to 10 servings.
