Ingredients
- 2 Tbsp. olive oil
- 1 c. diced onion
- 1/2 c. diced celery
- 1 Tbsp. minced garlic
- 1 1/2 c. uncooked, converted rice
- 4 oz. kielbasa, sliced 1/4 inch thick
- 4 oz. diced ham
- 1 c. chicken broth
- 2 cans (15 oz. each) pinto beans, rinsed and drained
- 1/4 tsp. cayenne pepper
- 1/4 tsp. thyme
- 1 bay leaf
- 2 cans (10 oz. each) Ro-Tel diced tomatoes and green chilies
Directions

1Preheat oven to 375°.

2In large skillet, heat oil; add onion, pepper and celery.

3Cook 5 to 7 minutes, stirring occasionally. Add garlic, rice and meats.

4Cook 2 to 3 minutes to coat rice, stirring frequently.

5Add all other ingredients.

6Heat to a boil. Pour into 9 x 12-inch baking dish.

7Cover tightly with foil; place in oven.

8Bake 18 to 20 minutes until rice is tender and liquid absorbed.

9Let sit for 10 minutes before serving.
