Ingredients
- 1 pkg. rice noodles, cooked and drained
- 3 Tbsp. oil
- 3 cloves garlic, crushed
- 2 eggs
- 1 pkg. firm bean curd, diced
- 4 oz. shrimp, pork or chicken
- 1/2 Tbsp. pickled Chinese radish
- 3 Tbsp. sugar
- 2 Tbsp. fish sauce
- 4 Tbsp. vinegar
- 1/2 Tbsp. paprika
- 2 Tbsp. chopped roasted peanuts
- 6 oz. bean sprouts
- 1/2 c. green onions, cut into 1-inch lengths
- 1/2 tsp. ground chili
- 1 fresh lime, sliced
Directions

1Heat oil in a wok and saute the garlic and pickled radish. Add eggs and stir.

2Season with sugar, fish sauce, vinegar and paprika.

3Add meat, bean curd and noodles.

4Toss and cook for about 10 minutes.

5Then add green onions, ground chili, bean sprouts and peanuts.

6Remove from heat.

7Garnish with additional peanuts if desired and lime on the side.
