  • 600g firm white fish fillets King Sooper's 1 lb For $7.99 thru 02/09
  • 1 cup KRAFT French Dressing
  • 1/4 cup finely chopped fresh coriander
  • 1/4 cup olive oil
  • 2 chillies, finely chopped
  • black pepper
  • 1/2 red capsicum, finely sliced
  • 1 yellow zucchini, finely sliced
  • 1 small eggplant, sliced
  • 6 large flat mushrooms
  • 50g rocket or lettuce
  • 50g red cabbage, thinly sliced

Directions

    Arrange the fish in a single layer in a glass dish.

    Combine the dressing, coriander, olive oil, chilli and pepper, and pour one cup of the mixture over the fish.

    Cover, refrigerate, and leave to marinate for 2 hours.

    Place the fish on a pre-heated BBQ hot plate, and cover with foil.

    Cook for 6-8 minutes, or until fish flakes easily with a fork.

    Add the vegetables, BBQ or grill until tender.

    Combine the chargrilled vegetables with the rocket and red cabbage to form a salad.

    Drizzle remaining dressing over the salad and then top with the cooked fish.

    Garnish with extra coriander, if desired.
