Ingredients

  • 1 cup coconut milk
  • 2 tablespoons Thai fish sauce
  • 1 lime, juice and zest finely grated
  • 1 stalk lemongrass, outer leaves discarded and core very finely chopped
  • 1 12 in piece ginger, peeled and finely grated
  • 2 red chili peppers, deseeded and very finely chopped
  • 2 scallions, trimmed and very thinly sliced
  • salt and pepper

    Mix all the ingredients together in a bowl and set aside for 2 hours to allow the flavors to infuse before using as required.
