  • 1/4 cup KRAFT Smooth Peanut Butter
  • 2 tablespoons red curry paste
  • 1 tablespoon lime juice
  • 4 (150g) snapper fillets
  • 3 tablespoons finely chopped coriander
  • minted tomato salsa
  • 3 tomatoes, peeled and diced
  • 1/4 cup diced red shallot
  • 1 tablespoon mint leaves, finely chopped
  • 1 tablespoon lime juice
  • 1 tablespoon extra virgin olive oil

Directions

    Combine peanut butter, curry paste, juice and 1 tablespoon of water.

    Spread onto fish, sprinkle with coriander.

    Seal snapper fillets in individual foil parcels.

    Cook for 10 minutes at 180C or until tender.

    Serve with Minted Tomato Salsa.

    Minted Tomato Salsa: Combine all ingredients, season to taste.
