- 1/4 cup KRAFT Smooth Peanut Butter
- 2 tablespoons red curry paste
- 1 tablespoon lime juice
- 4 (150g) snapper fillets
- 3 tablespoons finely chopped coriander
- minted tomato salsa
- 3 tomatoes, peeled and diced
- 1/4 cup diced red shallot
- 1 tablespoon mint leaves, finely chopped
- 1 tablespoon lime juice
- 1 tablespoon extra virgin olive oil
Directions

1Combine peanut butter, curry paste, juice and 1 tablespoon of water.

2Spread onto fish, sprinkle with coriander.

3Seal snapper fillets in individual foil parcels.

4Cook for 10 minutes at 180C or until tender.

5Serve with Minted Tomato Salsa.

6Minted Tomato Salsa: Combine all ingredients, season to taste.

7Chill.
