Ingredients
- 1 large frozen pizza
- Turkey, ham and provolone cheese, sliced
- 4 tablespoons sugar
- 4 cups frozen or fresh cranberries
- 2 cups prepared applesauce
- 1 large red bell pepper, top removed, cored and seeded
- 1 large yellow bell pepper, top removed, cored and seeded
- 1 pound fresh or frozen jumbo shrimp shelled and vein removed
- 2 tablespoons balsamic vinegar
- 4 (8-ounce) bacon wrapped filet mignon
- 1 pound tri-colored tortelloni
- Unsalted butter
- Olive oil
- Salt and pepper
- Fresh leafy herbs as garnish
Directions

1Preheat oven at 400 degrees.

2Bring enough salted water to a boil to cook the tortelloni.

3Cut the pizza into even amount of slice and make pizza sandwiches by placing one slice of turkey, ham and cheese in the center of 2 pizza slices.

4Use for appetizers.

5Boil 1 quart of water and add sugar.

6Completely dissolve the sugar and add the cranberries and cook until berries are soft, but not overcooked.

7Drain and reserve 1 cup of sweet cooking water.

8In a mixing bowl combine cranberries and applesauce and mix.

9Add some of the reserved water to aid in mixing.

10Fill the bell peppers with the mixture and set aside.

11Place 1 tablespoon of the olive oil and 2 tablespoons of butter in a heavy bottomed saute pan.

12Heat the pan and quickly cook the shrimp until pink and tender.

13Season with salt and pepper.

14Add the balsamic vinegar and mix thoroughly being careful not to over cook.

15Season with salt and pepper.

16Set aside.

17Season the filet mignon on both sides with salt and black pepper.

18Using a heavy bottomed, ovenproof pan, sear the meat for 2 minutes on each side.

19Place in preheated oven and cook to desired doneness.

20Place enough olive oil on the bottom of a non-stick pan to light coat.

21Heat the pizza sandwiches so that the cheese is just melting and the pizza is warmed through on both sides.

22Cut into smaller pieces and offer as appetizers.

23Cook the tortelloni, drain and reserve 1 cup of cooking water.

24Toss with butter and Parmesan cheese.

25If pasta gets dry add some of the reserved water and toss.

26Place the tortelloni in the center of a large platter and frame on one end with cranberry filled bell peppers.

27On the opposite end of the platter place the filet mignon and top with Sauteed shrimp.

28Garnish with fresh leafy herbs and serve and place in the center of the table.
