Ingredients

  • 4 tbsp Butter
  • 4 tbsp Olive Oil
  • 4 large Potatoes
  • 1/2 Green Pepper
  • 1/2 Yellow Onion
  • 1 lb Pulled Pork BBQ
  • 1 cup Favorite Nacho Cheese (Jar)
  • 1/4 Bacon Bits
  • 1/2 Sour Cream

Directions

    Brush potatoes with Olive Oil.

    Wrap each one in foil and bake at 400F for an hour and a half.

    Turn halfway through cooking.
  4. 4
    When potatoes a nearly done, melt butter in medium skillet and saute peppers and onions until just tender.

    About 10 minutes.

    Add Pulled Pork BBQ and cook until warmed through.

    (I Purchase my BBQ from my local meat market).

    Warm up the Nacho Cheese.

    Cut up potato as desired and layer with Pork BBQ, Nacho Cheese, Bacon Bits, and a dollop of Sour Cream.
