- 4 tbsp Butter
- 4 tbsp Olive Oil
- 4 large Potatoes
- 1/2 Green Pepper
- 1/2 Yellow Onion
- 1 lb Pulled Pork BBQ
- 1 cup Favorite Nacho Cheese (Jar)
- 1/4 Bacon Bits
- 1/2 Sour Cream
Directions

1Brush potatoes with Olive Oil.

2Wrap each one in foil and bake at 400F for an hour and a half.

3Turn halfway through cooking.

4When potatoes a nearly done, melt butter in medium skillet and saute peppers and onions until just tender.

5About 10 minutes.

6Add Pulled Pork BBQ and cook until warmed through.

7(I Purchase my BBQ from my local meat market).

8Warm up the Nacho Cheese.

9Cut up potato as desired and layer with Pork BBQ, Nacho Cheese, Bacon Bits, and a dollop of Sour Cream.
