Ingredients

  • 1/2 ounce fresh lemon juice
  • 1/2 ounce fresh lime juice
  • 3/4 ounce Simple Syrup
  • 1 ounce Pisco (South American grape-based spirit)
  • 2 ounces Aperol or Campari
  • 1 large egg white
  • Ice
  • 4 drops of Angostura Bitters

    In a cocktail shaker, combine all of the ingredients except the ice and bitters.

    Shake vigorously for 30 seconds.

    Add ice, then shake again.

    Strain into a chilled martini glass.

    Drop 4 dots of bitters onto the surface of the drink in the pattern of a square and swirl gently with a straw or toothpick to make a design in the foamy head.
