    Place meat, fat side up, in a 15 1/2 x 10 1/2 x 2-inch roasting pan.

    Insert a meat thermometer. Roast in a 325° oven until:

    rare, 2 1/2 hours or 140°; medium, 3 hours or 160°; or well done, 3 1/4 hours or 170°.

    Cover with foil to keep warm.
