- 3/4 c. all-purpose flour
- 3 Tbsp. unsalted margarine
- 1/4 tsp. vanilla flavoring
- 2 peaches, sliced and unpeeled
- 1/2 tsp. vanilla flavoring
- dash of salt
- 2 to 3 Tbsp. cold water
- vegetable cooking spray
- 1 Tbsp. apple juice
- 1 Tbsp. plus 2 tsp. brown sugar, divided
Directions

1Combine flour and salt in bowl. Cut in margarine with pastry blender until mixture resembles coarse meal.

2Sprinkle with water and 1/4 teaspoon vanilla.

3Stir with fork until all dry ingredients are moistened.

4Shape dough into ball and press into lightly greased pie plate. Set aside. Combine peaches, apple juice, 1/2 teaspoon vanilla and 1 tablespoon brown sugar, tossing well. Arrange peaches in concentric circles on dough, starting 1-inch from edge.

5Sprinkle with 2 teaspoons brown sugar. Bake at 400° for 25 minutes or until golden and crisp.
