- 3 beaten eggs
- 1/2 c. cooking oil
- 1/2 c. milk
- 2 1/2 c. sifted flour
- 1 c. sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 2 c. shredded carrot
- 1 1/3 c. coconut
- 1/2 c. snipped maraschino cherries
- 1/2 c. raisins
- 1/2 c. pecans
Directions

1Combine beaten eggs, oil and milk.

2In large bowl, sift together flour, sugar, baking powder, soda, cinnamon and salt.

3Add egg mixture, mix until thoroughly combined.

4Stir in carrot, coconut, cherries, raisins and pecans.

5Turn into 4 well-greased and floured (16 ounces) fruit or vegetable cans.

6Bake in 350° oven for 45 to 50 minutes.

7Remove from cans and cool thoroughly.

8Wrap and refrigerate overnight or until used.

9To make one large loaf, bake in 9 x 5 x 3-inch loaf pan for 55 to 60 minutes.
