Three Cheese Turnovers

  • 1 tbsp olive oil
  • 6 None green onions, sliced
  • 1 clove garlic, crushed
  • 1/2 cup ricotta
  • 1 cup feta, crumbled
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup fresh flat leaf parsley, chopped
  • 2 tbsp chopped fresh mint
  • 1/2 tsp ground nutmeg
  • 2 None large eggs, beaten
  • 3 sheets ready-rolled puff pastry
  • None None salad, to serve

Directions

    Preheat oven to 400°F. Line a baking tray with baking paper.

    Heat oil in a frying pan. Saute green onions and garlic for 1 min. Transfer to a large bowl.

    Add cheeses, herbs, nutmeg and eggs to bowl and mix. Season to taste.

    Cut each pastry sheet into 4. Place 1 heaped tbsp filling in center of each square. Wet edges with a little water and fold over to form a triangle. Press edges together and seal with a fork. Place on prepared tray and cut a small slit in each turnover.

    Bake for 10-15 mins, until golden. Serve with salad.
