- 3 Tbsp. orange juice
- 1 1/2 Tbsp. vegetable oil
- 1 tsp. lemon juice
- 1 tsp. sugar substitute
- 3/4 tsp. chopped fresh mint leaves or 1/4 tsp. dried mint
- 1/2 tsp. each: poppy seed and grated orange peel
- 1 c. cooked Uncle Ben's converted rice
- 3/4 c. small cantaloupe balls
- 1/2 c. each: sliced strawberries and pineapple chunks
Directions

1Combine first 4 ingredients.

2Add mint, poppy seed and orange peel.

3Mix well.

4Stir dressing into rice.

5Cover and chill several hours.

6To serve, stir in fruits.
