  • 3 Tbsp. orange juice
  • 1 1/2 Tbsp. vegetable oil
  • 1 tsp. lemon juice
  • 1 tsp. sugar substitute
  • 3/4 tsp. chopped fresh mint leaves or 1/4 tsp. dried mint
  • 1/2 tsp. each: poppy seed and grated orange peel
  • 1 c. cooked Uncle Ben's converted rice
  • 3/4 c. small cantaloupe balls
  • 1/2 c. each: sliced strawberries and pineapple chunks
