Three Layer Jam Cake

  • 1 1/2 c. butter
  • 2 c. brown sugar
  • 1 tsp. vanilla
  • 1 c. raisins
  • 1 c. nuts
  • 1 c. coconut
  • 1 c. buttermilk
  • 2 c. blackberry jam
  • 6 whole eggs
  • 1 tsp. nutmeg
  • 1 tsp. allspice
  • 2 tsp. baking soda
  • 3 tsp. cocoa
  • 4 1/2 c. all-purpose flour

Directions

    Cream together the butter, sugar, vanilla, jam and eggs.

    Sift flour together with the other dry ingredients, then combine the two mixtures alternately with buttermilk.

    Add raisins, nuts and coconut.

    (Take out 1 1/2 cups batter and save.)

    Pour remaining batter equally into 3 round cake pans and bake in your oven as you would any other heavy cake. After cake is cool, take the reserved batter and mix in

    1/2 cup sugar, 1 cup brown sugar, 1/2 cup butter and 1 cup milk.

    Cook until thickened. Cool and spread in between layers and on top.

    Frost with Caramel Frosting.
