Ingredients
- sirloin tip or rump roast
- 6 medium potatoes, peeled
- 1 large onion, sliced
- 6 carrots
- celery leaves or flakes
Directions

1Trim all visible fat from roast and layer with slices of onion, celery leaves/flakes and carrots.

2Place peeled potatoes along edge of roasting pan and add about 12 ounces of water.

3Cover and place in oven at 400° for 1/2 hour (this browns the roast), then 325° for the rest of the cooking time (approximately 2 more hours).

4When finished cooking, ladle meat juices into shallow bowl and place in freezer compartment of refrigerator about 8 to 10 minutes to allow fat to rise and harden.

5Remove hardened fat with a fork.

6Makes a delicious flavored gravy.
