Thyme Carrot Soup

- 6 c. chicken stock
- 1 1/2 c. carrots, cut in 1-inch pieces
- 1 onion, diced
- 1/2 c. heavy cream
- 1 1/2 Tbsp. fresh thyme or 1 1/2 tsp. dry nutmeg
- salt and pepper to taste
Directions

1Combine chicken stock, carrots and onions.

2Bring to a boil. Simmer 20 minutes.

3Puree along with 1/2 cup heavy cream.

4Add thyme, nutmeg, salt and pepper.

5Bring to a boil and simmer for 5 minutes.

6Garnish with fresh thyme.

7Serves six.
