Thyme Carrot Soup

Ingredients

  • 6 c. chicken stock
  • 1 1/2 c. carrots, cut in 1-inch pieces
  • 1 onion, diced
  • 1/2 c. heavy cream
  • 1 1/2 Tbsp. fresh thyme or 1 1/2 tsp. dry nutmeg
  • salt and pepper to taste

Directions

    Combine chicken stock, carrots and onions.

    Bring to a boil. Simmer 20 minutes.

    Puree along with 1/2 cup heavy cream.

    Add thyme, nutmeg, salt and pepper.

    Bring to a boil and simmer for 5 minutes.

    Garnish with fresh thyme.

    Serves six.
