  • 1 lb. bag dry pinto beans
  • 6 lb. beef rump roast
  • 1 Tbsp. butter
  • 1 c. banana pepper and green pepper, chopped
  • 2 sliced onions
  • 2 c. tomato juice
  • 1 (8 oz.) tomato sauce
  • 1/2 c. water
  • 2 Tbsp. cider vinegar
  • 2 Tbsp. brown sugar
  • 2 tsp. salt
  • 1 tsp. dry mustard
  • 1 tsp. thyme

Directions

    Wash beans. Cover with cold water and soak overnight. Bring beans to a boil and cook 1 hour. Drain and discard water. Brown roast in butter in a large Dutch oven. Add peppers and onions and cook until tender. Add beans and remaining ingredients. Cover and bake at 350° for 3 hours or longer. Check at 3 hours to see if beans are tender and meat is done.
