- 1 lb. bag dry pinto beans
- 6 lb. beef rump roast
- 1 Tbsp. butter
- 1 c. banana pepper and green pepper, chopped
- 2 sliced onions
- 2 c. tomato juice
- 1 (8 oz.) tomato sauce
- 1/2 c. water
- 2 Tbsp. cider vinegar
- 2 Tbsp. brown sugar
- 2 tsp. salt
- 1 tsp. dry mustard
- 1 tsp. thyme
Directions

1Wash beans. Cover with cold water and soak overnight. Bring beans to a boil and cook 1 hour. Drain and discard water. Brown roast in butter in a large Dutch oven. Add peppers and onions and cook until tender. Add beans and remaining ingredients. Cover and bake at 350° for 3 hours or longer. Check at 3 hours to see if beans are tender and meat is done.
