  • 1/2 c . plus 1/8 tsp. sugar
  • 1 c. plus 1 Tbsp. Espresso coffee
  • 8 oz. Mascarpone cheese
  • 1/8 c. dark cocoa
  • 16 to 20 toasted ladyfingers
  • 2 Tbsp. Italian brandy

    Beat egg whites with 1/8 teaspoon sugar until stiff peaks form.

    Beat egg yolks, 1/2 cup sugar, 1 tablespoon Espresso and brandy until smooth.

    Add cheese and beat for 5 minutes.

    Fold in the whipped egg whites until thoroughly combined.
