Ingredients

  • 4 eggs yolks and whites separated
  • 5/8 cup sugar divided
  • 3 7/8 cups mascarpone cheese room temperature
  • 7/8 pound ladyfingers
  • 1 11/16 cups coffee
  • cocoa powder bitter

Directions

    In a bowl, whisk together the egg yolks and 60 grams of sugar until combined. Add the mascarpone cheese and whisk until there are no lumps.

    In another bowl, whisk together the egg whites with the remaining 60 grams of sugar until the mixture comes to stiff peaks.

    Carefully fold the egg yolk mixture into the egg white mixture, trying not to lose volume.

    Set out a baking tray with a flat bottom.

    Soak the ladyfingers in coffee for a maximum of 3 seconds each and set them down in a layer in the baking tray.

    Cover the ladyfingers with a layer of the cream you made. Use a spatula to spread it out evenly.

    Sprinkle with cocoa powder.

    Repeat all layers again, finishing with a layer of cocoa powder.
