Ingredients

  • 1 2/3 cups all purpose flour
  • 1 pinch mustard powder
  • 4 eggs
  • 1 1/4 cups milk
  • 4 tablespoons fresh parsley leaves chopped
  • 2 tablespoons oil
  • 8 pork sausages
  • 1 tablespoon lard or 2 tbsp vegetable oil
  • onion gravy
  • 2 tablespoons butter
  • 1 onion large, peeled, sliced
  • 1 1/2 tablespoons all purpose flour
  • 2 cups beef stock
  • 2 tablespoons worcestershire sauce

Directions

    Sift together flour and mustard powder. Mix together eggs and milk then mix into dry ingredients until smooth. Add parsley and season. Cover and set aside for 30 mins.

    Meanwhile, preheat oven to 425°F. Heat oil in a large frying pan. Sear sausages for 5-6 mins, turning frequently, until just cooked through.

    Place lard or oil in a shallow baking dish and place in oven for 10 mins, until almost smoking. Add sausages to baking dish and pour batter over top. Bake for 30 mins, until golden brown.

    Meanwhile, to make the gravy, melt butter in a saucepan. Cook onion over medium heat for 10-12 mins, until golden brown. Add flour and cook for 1 min. Gradually whisk in stock and Worcestershire sauce. Bring to a boil and cook, stirring, until thickened. Season.

    Cut toad in the hole into squares. Serve immediately with onion gravy.
