  • 1 c. toasted coconut
  • 2 c. flour
  • 3/4 c. sugar
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1 beaten egg
  • 1 c. milk
  • 1/2 c. melted shortening or oil
  • 1 tsp. vanilla

    Mix dry ingredients well.

    Add wet ingredients all at once. Mix well.

    Pour into 9 x 5-inch greased loaf tin.

    Bake at 350° for 1 hour or until tested done.

    As an alternative, pour into muffin tins and bake at 400° for 20 minutes.

    Makes 1 loaf or 12 muffins.
