  • 1 1/2 c. regular rice
  • 1 1/2 tsp. salt
  • 1/4 c. chopped onion
  • 1 1/2 tsp. baking powder
  • 1 c. chopped pecans
  • 3 c. water
  • 1 1/2 c. finely diced celery
  • 1/2 c. butter
  • 3/4 tsp. poultry seasoning
  • salt and pepper

Directions

    Spread rice in shallow pan and toast until light brown, about 20 minutes in 350° oven.

    Stir occasionally.

    Place rice in large pan.

    Add water and salt and bring to a boiling point.

    Cover tightly, lower heat and simmer 14 minutes.

    Remove lid and let rice steam until just dry.
