- 1 cup all-purpose flour
- 1 12 cups whole wheat flour
- 12 cup rolled oats
- 1 12 teaspoons cinnamon
- 1 tablespoon baking powder
- 12 teaspoon salt
- 14 teaspoon ground ginger
- 1 cup sugar
- 14 cup pureed squash
- 1 14 cups shredded zucchini
- 1 14 cups shredded carrots
- 34 cup raisins
- 34 cup oil
- 3 large eggs
- 1 egg white
Directions

1Preheat oven to 350.

2Combine flour through sugar in a bowl.

3In a seperate bowl, combine eggs and oil with a wisk.

4Add squash, zucchini and carrots to mixture.

5Combine wet and dry ingredients and mix well.

6Add raisins or other dried fruit.

7Scoop into muffin tins, filling to about 3/4 full.

8Bake for 22 minutes or until toothpick comes out clean.
