1Combine the sugar and water together in a saucepan. Stir with a clean metal spoon over low heat until the sugar has dissolved and the mixture becomes clear.

2Stop stirring and allow the mixture to come to the boil, boil for 12-15 minutes. Using a wet pastry brush, brush away any sugar crystals that have not been dissolved.

3Be aware that your toffee mixture will continue cooking after it has been removed from heat, cook your toffee to a light golden brown.
