- 1 large Vidalia or sweet onion
- 2 Tbsp. flour
- 1 large egg, slightly beaten
- 1 c. saltine cracker crumbs
- vegetable oil
Directions

1Any dark honey mustard or Ranch Style dressing.

2Peel onion, leaving root end intact.

3Cut onion vertically into quarters, cutting to within 1/2-inch of root end.

4Cut each quarter into thirds.

5Place onion in boiling water for 1 minute.

6Remove and place in ice water for 5 minutes.

7Loosen petals if necessary. Drain onion cut side down.

8Place flour in a Ziploc bag.

9Add onion, shaking to coat.

10Dip onion in egg.

11Place cracker crumbs in plastic bag.

12Add onion, tossing to coat.

13Chill 1 hour.

14Pour oil to depth of 3 inches into fryer and heat to 375°.

15Fry onion 5 to 7 minutes or until golden brown; drain on paper towel.

16Salt if necessary.

17Serve with dressings.
